roast tomato & zucchini lasagna
roast tomato + onion + garlic in olive oil + sea salt.
blend just the onion + garlic, and mix it back into the tomatoes.
ricotta + basil leaves + baby spinach + salt & pepper.
zucchini slices rubbed in olive oil + sea salt + rosemary.
layer with (gf) lasagna sheets.
top with shaved parmesan. bake on med/high until browned. serve with crushed basil leaves.
